Spinach and Pasta in Lemon Sauce1 green onion, sliced1 green garlic, sliced1-2 small zucchinis, sliced in half moons1/2 pound spinach, roughly chopped1 lemon1/3 cup + 1 tablespoon olive oil1/4 cup grated parmigiano reggiano cheesesalt and pepper1/2 box pastaBegin by boiling the pasta in well salted water.  In a large saute pan  heat the white and light green parts of the green onion and green garlic in 1 tablespoon olive oil.  Reserve the green parts for garnish.  Add the zucchini and saute for a few minutes.  Add the spinach and cover.  Add grated lemon rind if desired.  Let steam for a few minutes.  Do not let it over wilt.In a small bowl combine the lemon juice and olive oil.  Beat to form an emulsion.  Add the parmigiano reggiano and stir.   Just before the pasta has finished cooking add one ladle full of pasta water.  Stir to combine.  Add salt and pepper to taste. Drain the pasta and add it to the zucchini and spinach.  Pour the lemon sauce over it and stir well to coat.  Garnish with the remaining green garlic and green onion and parmigiano reggiano.
